Baked Bacon and a Blueberry Blitz

For the past 18 days I have been making healthier food choices. I am not on a DIET. I’m seriously trying to make a lifestyle change here. I want to be healthier, not skinnier (although that would be nice) and I want to feel better. I’m tired of taking meds for things that could be remedied by just making healthier food choices in my life.

For the first time in my time at Celebrate Recovery, I took a Blue Chip (AKA Desire Chip), for healthier eating. I have refused to do that for as long as I’ve known that my eating is out of control. Please keep me in prayer as I make this life change. Pray that I would make the choice every day to stay away from sugar (because of my diabetes), and processed foods. Pray that I will eat more veggies, fruits and whole grains. This is the year I do it!

Last night I wanted bacon so I Baked my Bacon on a wire rack, in a sheet tray so that it wouldn’t sit in its grease. For lunch today I had a BLT on whole wheat toasted bread with avocado. I only used two slices of bacon and had mostly veggies but I got my bacon fix.

I also remembered that I had some fat-free cottage cheese in my refrigerator. I’ve been trying to figure out what to do with it. Here’s what I made:

Fat-Free Blueberry Blitz

    • 1/2 cup fresh blueberries
    • 1/2 cup fat-free cottage cheese
    • Cinnamon
  1. Pour your blueberries on a small plate or in a bowl.
  2. Spoon over your cottage cheese.
  3. Sprinkle whatever amount of cinnamon you want on it.

It’s easy-peasy, fast and better for you than a big fat bowl of ice cream. You could easily eat this for breakfast or as a snack later in the day.

I ENJOYED my lunch today.

Later, my aunt dropped by and brought me a surprise! I love surprises!
