Chai Spiced Oatmeal

Oatmeal a la Chai

Ingredients

  • 2 Chai Tea Bags
  • 1 cup Water
  • 2 tsp Chai Spic Mix
  • 2 cups Old Fashioned Oats
  • 3 cups Milk (your choice) I did 1 cup almond milk and 2 cups 2% Milk
  • 1 Tbsp Vanilla Extract
  • 1 Star of Anise
  • 2 cardamom pods (slightly crushed)

"EXTRAS"

  • Chopped Pecans
  • Coconut Palm Sugar or Brown Sugar
  • Real Maple Syrup

Instructions

  • In a medium pan, bring water, milk, star of anise, cardamom pods, chai seasoning and tea bags to a boil. Once it comes to a boil, reduce the heat and let simmer for 3-4 minutes. Make sure you stir constantly because you don't want the milk to burn to the bottom of the pan. Remove the tea bags, star of anise and cardamom pods. Then, stir in oats.  Cook until thick, about 5-7 minutes. Stir in vanilla extract and serve.

"Extra"

  • Just some ideas on additional toppings because there is no sugar in this recipe. You can eat the oatmeal as is or do the "EXTRA"
I added chopped pecans, coconut palm sugar and a drizzle of real maple syrup to mine.
The Mister added chopped pecans, brown sugar and maple syrup to hi.

Almost Summer Cucumber Tomato Salad

Summer is almost here! Or is it? I know that it’s still cooler in most parts of the country and some are NOT enjoying it. Here in south Texas, the evenings have been cool and a little gloomier than normal for this time of year and I LOVE it BUT, I am also longing forRead more

Celebrating Recovery

On the outside, I looked a like a normal college student, taking care of herself, working two half-time jobs on campus, doing full-time school work and getting stuff done in my life. On the inside, I was hurting, broken, angry, purposeless, empty, struggling with self-esteem issues and medicating it all with alcohol, drugs, sex andRead more

Life Distracts-Just Some Highlights- 6 Months Worth!

My last blog post was from July 2017- Oh how life distracts from the things we love the most.  So much took place after that. The first being, well, I turned 40! I got a birthday WOD at the gym and loads of friends showed up (maybe by accident, maybe because they love me *shrug*)Read more

On This Day…

This morning, I sat for a while and I was thinking about an intense conversation the Mister and I had yesterday. It was a GREAT little conversation (insert sarcastic tone). He basically put me in my place for treating him like a child. In case I’ve never said this here before, “My name is LeslieRead more

Two years ago, the Mister and I went on a mission trip to Katira, Costa Rica. It was an amazing, life-changing experience. You can read about that here. This summer, our church is going on mission to Peru, but sadly, we won’t be on that trip. We have lots of things going on in lifeRead more

Spicy Maple Bacon Popcorn

Since about the age of four, I have LOVED popcorn. I remember my mom making popcorn for us in an air popper and then pouring buttery goodness over the top. I remember making popcorn with the help of my dad on the stove with one of those popcorn packages that looked like a pan. YouRead more
