Chai Spiced Oatmeal

Oatmeal. I never thought I would be writing up a blog post about oatmeal. This one is better than regular oatmeal though, it’s all about Chai Spiced Oatmeal.

I woke up Wednesday morning craving oatmeal. I haven’t eaten oatmeal in over 20 years. I think it might be because my grandmother would make it for me all the time when I was in high school. She didn’t make it because I liked it, she made it because it was all we had. Now, my grandmother’s oatmeal was DELICIOUS but one can only eat so much oatmeal.

This is how it went down. I woke up and touched the Mister’s face to wake him up. He sighed heavily (because I was waking him up) and said, “Yes, my love?” And I said, “If I make oatmeal, will you eat it?” He turned over and looked at me and said, “I thought you didn’t like oatmeal.” I shrugged and said, “Well, that’s what I’m craving.” Also, I am NOT pregnant.

I got out of bed, put my house shoes on and went straight to the kitchen.

I made my own Chai Spice Mix. You’ll need this for the oatmeal.

Chai Spice Mix

Ingredients

  • 2 Tbsp Ground Cardamom
  • 2 Tbsp Ground Cinnamon
  • 2 Tbsp Ground Ginger
  • 1/2 Tbsp Ground Cloves
  • 1/2 Tbsp Ground Nutmeg
  • 1/2 tsp White Pepper

Instructions

  • Mix all the spices together in a bowl, with a whisk and then store in an airtight container. I used a small masonjar.

The first thing I did was make the chai spice mix and also made sure that I had some chai tea bags. Our favorite is the Trader Joe’s brand. Luckily we still had some. We have to travel 4 hours north for a TJ’s. We always stock up on these tea bags so that we aren’t without.

My Chai Spiced Oatmeal came after some inspiration from a Mind Full Mom.

Chai Spiced Oatmeal

Oatmeal a la Chai

Ingredients

  • 2 Chai Tea Bags
  • 1 cup Water
  • 2 tsp Chai Spic Mix
  • 2 cups Old Fashioned Oats
  • 3 cups Milk (your choice) I did 1 cup almond milk and 2 cups 2% Milk
  • 1 Tbsp Vanilla Extract
  • 1 Star of Anise
  • 2 cardamom pods (slightly crushed)

"EXTRAS"

  • Chopped Pecans
  • Coconut Palm Sugar or Brown Sugar
  • Real Maple Syrup

Instructions

  • In a medium pan, bring water, milk, star of anise, cardamom pods, chai seasoning and tea bags to a boil. Once it comes to a boil, reduce the heat and let simmer for 3-4 minutes. Make sure you stir constantly because you don't want the milk to burn to the bottom of the pan. Remove the tea bags, star of anise and cardamom pods. Then, stir in oats.  Cook until thick, about 5-7 minutes. Stir in vanilla extract and serve.

"Extra"

  • Just some ideas on additional toppings because there is no sugar in this recipe. You can eat the oatmeal as is or do the "EXTRA"
I added chopped pecans, coconut palm sugar and a drizzle of real maple syrup to mine.
The Mister added chopped pecans, brown sugar and maple syrup to hi.

Friends, if you like Chai, you’re gonna love this oatmeal. If you don’t like Chai, you might still like this oatmeal. The blend of spices is amazing!

This is quarantine life for me right now: Spending lots of time in the kitchen!
