Gluten Free Blueberry Muffins

Quarantine life has me working through all the baking stuff that I have in my pantry. One of those things was a boxed Gluten Free Blueberry Muffin Mix from Krusteaz. FYI: This is not a sponsored post, it’s just me baking with what is in my pantry.

On some days I can be a little “extra” in the kitchen and this was one of those days. I did the “extra” recipe thing on the back of the box which was make a crumbly topping.

The crumbly topping was almond flour, butter and unsweetened coconut.

At first, I looked at the crumbly topping skeptically but figured that since I had already mixed it together that I should just go ahead and try it out. Mostly because in this time of quarantine, I was not about to waste the two tablespoons of REAL butter I had used. (Butter has been hard to come by lately.)

In the end, I was pretty impressed with the crumbly topping and was happy that I decided to do the “extra”. The Mister liked the muffin as well and he’s absolutely NOT impressed with anything that is gluten free.

These have stored well in the refrigerator in a ziplock bag and we have been enjoying them at breakfast time with coffee.

When the quarantine is over- this mix is totally worth picking up at the grocery store. I picked this one up at my local HEB but I’m sure you’ll be able to find it in most stores. Also, if you go to the Krusteaz website and sign up for their email updates they often have coupons and recipes for you.
