Summer is almost here! Or is it? I know that it’s still cooler in most parts of the country and some are NOT enjoying it. Here in south Texas, the evenings have been cool and a little gloomier than normal for this time of year and I LOVE it BUT, I am also longing for warm, sunny days outside, lemonade and bright flavors. One of my favorite ways to get those bright flavors is in salads! So, I wanted to share my cucumber tomato salad with you all.
I recently became a member of Young Living Essential Oils and some of the people on my team know that I have a food blog and that I love to cook. They have said a few times now, that they can’t wait to see how I use my essential oils in my kitchen and so today, that’s what I did- I used my essential oils in the kitchen!
I also did a fun video. I haven’t been one to want to do this at first BUT I decided it definitely wouldn’t hurt and although the thumbnail is silly looking and this video is in no way professionally done, I figured why not? LOL
Cucumber Tomato Salad
Ingredients
For Salad
- 3 Roma Tomatoes chopped
- 1 cucumber peeled & chopped
- 2 medium avocados chopped
- 1/4 cup red onion chopped
- 1/4 cup cilantro chopped
For vinaigrette
- 1 Tbsp olive oil
- 2 drops Young Living Black Pepper Essential Oil
- 2 drops Young Living Lemon Essential Oil
- 1/4 tsp garlic powder
- 1/4 tsp kosher salt
Instructions
For salad
- Mix tomatoes, cucumber, avocado and red onion in a medium sized bowl and set aside.
For vinaigrette
- Mix olive oil, black pepper oil, lemon oil, garlic pepper and kosher salt in a small bowl- I use a little whisk.
- Pour the vinaigrette over the salad and mix with a spoon. Then add the cilantro and mix well.
- Refrigerate for at least 2 hours to let the flavors meld.
