Try It Out Thursday- Baked Arancini (aka Rice Balls)

Try it Out Thursday

Try It Out Thursday is dedicated to recipes, products or ideas that I find on Pinterest or receive in my e-mail. I tend to “pin” and save a lot of recipes and craft ideas and never try them so I decided that this will help me wade through the many pins and e-mails that I have.

Last week we had A LOT of rain. This past week we were supposed to get A LOT of rain as well so, our local school districts canceled school.

Needless to say, it didn’t rain THAT much but school was still canceled. Fun for everyone!

For me, rainy weather puts me in the mood to be in the kitchen. I get to focus on what I’m doing because the satellite cable goes wacko and I can’t watch anything. What a better way to spend a rainy day than in the kitchen.

I have seen Arancini on a couple of blogs recently and had jotted down in my mind that I wanted to try to making them. It seemed like the perfect day!

I used a recipe from Just a Pinch and pretty much followed it to the “T”. The only thing I did was add fun things to my rice. I actually made my rice in the rice cooker.

I used brown rice, added 2 Tbsp of cilantro, 2 cloves of minced garlic, and 1/2 a diced onion. My kitchen smelled HEAVENLY! I let the rice cool and then proceeded with the recipe.

I served my my Baked Arancini with fresh steamed veggies (carrots, zucchini and onions), roasted mushrooms, and a spinach salad.

They were so good! My mouth watered every time I brought one up to my mouth. I loved the creamy texture mixed with the rice. This is a great meal for “Meatless Monday”!!

I will make these again!
