Try It Out Thursday: Mmm…Yum Carrot Cake

Try it Out Thursday

Try It Out Thursday is dedicated to recipes, products or ideas that I find on Pinterest or receive in my e-mail. I tend to “pin” and save a lot of recipes and craft ideas and never try them so I decided that this will help me wade through the many pins and e-mails that I have.

I almost did not want to share this pin that we tried out the other day because it was so good.

I had a birthday 10 days ago and since the second year into our marriage, my hubby has made my birthday cake.

This year he asked me what I wanted but I just wasn’t in the mood for birthday cake. He named every combination he possibly could but I just wasn’t interested. Then a beautiful thought came to mind and I just said, “Carrot Cake, I want Carrot Cake!”

There is a woman in our church that I adore so much! She calls herself “the meanest lady” and when you ask her how she is she says, “Oh, meaner than ever!”. She is actually one of the sweetest, most loving and kindest women that I know.  I love her and this woman makes the most amazing carrot cake.

Working at the church has blessed me in more ways than one and one of those ways was when she would just randomly show up at the church office with one of her carrot cakes. I loved them so much because when you cut into it you could see the ingredients.  She is older now and fragile in her health so we don’t get carrot cake from her but I think of it often and always say to myself that I need to find a recipe that is similar to hers.

We found this one and it’s pretty darn close. It’s “To-Die-For Carrot Cake” from Mom On Time Out.

My hubby made a few of his own adaptations and he also turned them into cupcakes so that we could share with friends and family.

He also used our family cream cheese frosting recipe. They were moist and chunky and nutty and perfect! This recipe will stay with our family.

I look forward to making these cupcakes this fall, winter, spring and summer and again and again WHENEVER I want!
