Lemon Curd

I have always wanted to make Lemon Curd. While at the grocery store on Saturday, I smelled the lemons in the produce section. I walked over, looked at my hubby and said, “That’s it! I’m making lemon curd!” He laughed and said, “Ok!” I love how he never discourages me from making something new.

I searched the internet for a recipe on how to make lemon curd and found some really complicated ones. I am NOT about complicated. I ended up using the recipe on Joy Of Baking. I had never really been to this website and got excited to see there was a video on making lemon curd. Yay!

I followed the recipe as is.

What did I do with the lemon curd, you ask? I made some biscuits, grilled them in a little butter…

spooned some lemon curd over and served it with some basil! 

It was beautiful & delicious!

I still have 8oz of this beautiful lemon custard in my refrigerator. Any ideas on what to do with it next?

  1. I love lemon curd with blueberries…tarts made with puff pastry, pie, scones, shortbread cookies with lemon curd and blueberries, crepes rolled up with blueberries and topped with lemon curd. Yum!

  2. I would fill cupcakes with lemon curd! Or maybe fill a tart shell, then top it with some fresh raspberries and whipped cream. 🙂
