Avocado Cilantro (Creaminess) Dip

We have been eating veggie patties this week and so that we may continue to be entertained by them, I decided that I needed to make a lil’ somethin’ somethin’ to put on top.

First, I made a cilantro dressing:

1 bunch of cilantro (yes, I even used the stems)

1 stalk of celery

1 Tbsp minced garlic

2 Tbsp of lemon juice

1 Tbsp of Extra Virgin Olive Oil

Salt & Pepper to taste

  • Pulse the cilantro, celery and minced garlic in your food processor a few times until the cilantro is chopped up
  • Add lemon juice and olive oil
  • Pulse until smooth
  • Salt & Pepper to taste

You can store this for about a week in the refrigerator (maybe longer), but it doesn’t usually last that long. And because it tastes so amazing, you will want to put it on everything!

Yesterday, I decided I wanted something a little different. I wanted a dressing or something for my veggie patty, but I wanted to put avocado in it. So, I made the above recipe without the celery stalk and I added 1 whole avocado (minus the skin and pit of course).

It was the creamiest, most perfect thing in the world for my veggie patty AND for my Baked Tostitos!
