In light of COVID-19, I decided to start blogging again. I mean, why not? I’m home, not as busy as normal because well, “shelter in place” and I’m actually in my kitchen doing stuff!! Doing stuff like making Lemon Basil Cake!
My quarantine started almost 3 weeks ago. I have been caring for my 6 year old niece and she was diagnosed with the flu. She was told she had to stay home for 5 days and so that is what we did. Then her Spring Break started and I got sick. Not the flu but with my normal March- July allergy induced asthma that inevitably turns into bronchitis.
Then, COVID-19 came to our area and since my immune system is already compromised due to being diabetic and having asthma, I have been at home. Now, I’m not JUST at home, I’m working from home and I’m grateful for that because at least there is SOMETHING else to think about.
Yesterday morning I woke up craving Lemon Cake. So, I began my venture onto Pinterest for a good recipe and then thought, “Hey, you have amazing foodie friends, ask them for their recipes because then you don’t have to worry about them being a flop.”
I reached out to my bestie here in town and to my friends Sharon & Winter who host the Hungry Squared Podcast and I ended up salivating over my friend, Winter’s Lemon Basil Cake!
First thing- this morning, I realized that I had NO basil and I knew after seeing all the pictures from around town that I was NOT about to go stand in any grocery line for it. So, I reached out on my Facebook page and the wonderful Mrs. Mary Sullivan offered to give me some basil from her garden. I made a quick trip to her porch to pick it up! Without that basil, this cake would not exist so, thank you!!! <3
Next: Had to make Lemon Curd. I used the recipe that Winter had on her blog which she adapted from a few others. It’s a microwave version and OH MY! I’ll probably ONLY make lemon curd this way ever again! I don’t even care that it was made in the microwave- it’s AWESOME!
This curd gets mixed into a cream and sugar frosting and oh my goodness!!
I didn’t change a thing about Winter’s recipe except the shape of the cake. I made it into a bundt cake. It had to bake for 10 minutes longer than the recipe stated because of that.
Lemon cake is not normally a cake that I would think to make, but this one, it totally has made it to the list of things that I will continue to make for the rest of my life!

Leslie! I am so glad to see this post! I’ve missed your podcasts and was actually just thinking I need to send a message to you to check on you. I was hoping the reason for your radio silence was that things were just busy for you and Aaron and the other ladies on the Southern Sides podcast. I’m sorry that you’ve been so sick :(.
This cake looks delicious! I never would think to put basil in a cake but I have had basil in lemonade and definitely agree they go well together so I’ll have to try it. And my husband loves lemon cake. Wouldn’t it be nice if I found something different and it turned out to be a new favorite?
I’m also super happy that I saw the email because the email address this came to is one I barely use anymore so it reminds me that I need to subscribe with my married name email! 🙂
