Try it Out Thursday
Try It Out Thursday is dedicated to recipes or ideas that I find on Pinterest or receive in my e-mail. I tend to “pin” and save a lot of recipes & craft ideas and never try them so I decided that this will help me wade through the many pins and e-mails that I have.
Last week was my hubby’s birthday week. Since we’ve been married, (going on 5 years in October) I always ask him if he’d like me to make him anything special. A couple of years back I made him a root beer cake. He loved it!
He mentioned root beer cake in passing a couple of weeks ago and I kept it in mind. At work, the office usually celebrates staff birthdays and when I was asked what we should do, I decided that I was going to make root beer float cupcakes. We also had root beer floats!
I adapted the recipe from Bakingdom.
The changes that I made were minimal. Instead of using 3/4 cup granulated sugar and 1/4 cup of brown sugar, I used 1/2 cup of granulated sugar and 1/2 cup of packed brown sugar. I also forgot to pick up a bottle of root beer so I made my own root beer with the Zatarain’s Root Beer Extract by following the instructions on the back of the bottle.
They were so chocolaty!
After the cupcakes cooled, I tasted one because I wanted to make sure they weren’t dry. They were kind of dry and so to remedy the problem I used my handy apple corer to core my cupcakes and fill them with Vanilla Bean Buttercream frosting.
Then I piped the frosting on to look like the top of a root beer float. I also separated some of the frosting and colored it with my favorite icing coloring set by Wilton so that I could make a cherry on top.
To top it all off I cut up some pretty paper straws and stuck them in near the cherries.
And Voila! Root Beer Float Cupcakes!!
I will continue to work on this recipe because I really like it.
