Try it Out Thursday
Try It Out Thursday is dedicated to recipes or ideas that I find on Pinterest or receive in my e-mail. I tend to “pin” and save a lot of recipes & craft ideas and never try them so I decided that this will help me wade through the many pins and e-mails that I have.
This is my FIFTH week of Try It Out Thursday’s. How are you liking it?
Have you ever tasted Trader Joe’s Cookie Butter? Well, if you haven’t you absolutely need to! I had my first experience with cookie butter last August when I went to Lake Forest, California for the Celebrate Recovery Summit at Saddleback Church. I had seen and read a lot about Cookie Butter through all the different blogs of the fun foodies I was following on Instagram and Twitter. One day, someone, and I can’t remember who, was going on and on about this delicious cookie butte on their blog and I just KNEW I had to try it. Problem: There was no Trader Joe’s anywhere near me (at the time). I knew I would be going to California in August so I looked up TJ’s and came back to Texas with 8 glorious jars of cookie goodness! When I saw that Love and Olive Oil had Speculoos Cookie Sandwiches on her blog, it was imperative that I make them! Her recipe is basically for the cookies that are used to make cookie butter.
Here’s what mine looked like!
When I make this recipe next time, I will make smaller cookies. I made them kind of big and one cookie was enough for at least two days!
I would make them as big as those little hearts. They were bite-sized and perfect for a snack.
The filling was soooo good! I could have eaten by the spoonful but I knew that wasn’t gonna be good for me!
These cookies went to the office the next morning and were all gone quickly!
That’s one thing I must tell you. I love to bake for other people, not really myself. So, when I make goodies at home, they don’t stay very long. I usually send or take them away where other people can enjoy them.

Yum! These look delicious. Sometimes you can find something similar under the brand name Biscoff cookie spread. It’s like those Biscoff cookies you get on the Delta flights. I’ve found this spread at local grocery stores (non-Trader Joe’s).
