Welcome to my FIRST “Try It Out Thursday” blog entry!!
Try It Out Thursday will be dedicated to recipes or ideas that I find on Pinterest or receive in my e-mail. I tend to “pin” and save a lot of recipes & craft ideas and never try them so I decided that this will help me wade through the many pins and e-mails that I have.
As I’ve been doing Weight Watchers for 3 weeks now, I have had to get creative with my food and come up with substitutes for the things that I love most!
One of the things that I love most, is TACOS! I love breakfast tacos, chicken tacos, tacos de bistek, and pretty much anything that includes a tortilla. My biggest VICE?? Flour tortillas!
I’ve been eating a lot of vegetables lately because they are FREE, point wise. One evening, my mother in-law made ground beef tacos with lettuce tomato, and cheese. As much as I wanted them, I knew that I would want like 6 of them and well, that would be a lot of points. I was roasting up some veggies to have with chicken and then I had a thought! Why not make tacos but fill them with veggies and top them with light string cheese???
So, that’s what I did!!!
Depending on how many tacos you decide to eat, this meal can vary in points. This picture is of three tacos with one string cheese divided. The great thing is that you can really fill these up with veggies and get really full. I also did not fry the tortillas. I just heated them on the griddle until they were hot and pliable.
This picture is a four point meal. It’s 1 point for each tortilla and 1 point for the string cheese.
(This meal would also be Daniel Fast Friendly without the cheese!!)
Keep coming back for more Weight Watchers recipes. I’ll be doing this for awhile, I hope and seriously excited about what will come of it all recipe-wise.
