Spinach Meatballs

Anyone a fan of meatball subs? This girl is NOT a fan of meatball subs unless the meatballs are homemade!

It’s true, I will not eat a meatball sub anywhere unless it’s a homemade meatball. Today I’m sharing my spinach meatball recipe with you guys. (I used ground turkey but you can use ground beef or even ground chicken with these.)

Spinach Meatballs

(Makes 12-14 3.5oz meatballs)

2lbs ground turkey

1/3 onion chopped

1 teaspoon minced garlic

4 cups of spinach

1/4 cup matchstick carrots

Kosher salt

Ground pepper

1 egg (or 1/4 cup egg beaters)

2/3 cup bread crumbs (or 15 multi-grain crackers ground in food processor)

2 Tbsp EVOO

1/3 cup shredded low fat mozzarella cheese

Pre-heat oven 400 degrees.

In a skillet heat EVOO. Take your onion, garlic and carrots, and chop them in a food processor. Pour into skillet, add spinach and sauté for about 3 minutes, or until spinach is wilted down. Set aside to cool.

If you’re not using bread crumbs, take the crackers and grind them in your food processor.

In a large bowl, mix your veggies in with the ground turkey. (Make sure your veggies have cooled down before you do this.) Add egg and mix well. Then add bread/cracker crumbs and mozzarella. Add a pinch of both salt and pepper.

Take about a 1/4 cup of meat and roll into a ball and fill a cupcake/muffin pan. (Let me tell you that this is the best way to bake meatballs. I usually spray each little cup with some non-stick spray and that makes it easier for clean up too!)

Bake for 20-25 minutes.

Serve with spaghetti sauce (a healthy one of course–I like Francesco Rinaldi Sauces ) poured over or in your spaghetti or in meatball sub sandwiches.

You can even buy some dinner rolls and make sliders with these babies!
