Chicken Zoodle Soup

Ingredients
  

  • 1 Tbsp Olive Oil
  • 1 chicken breast cooked & chopped
  • 1 celery stalk chopped
  • 1 carrot peeled and chopped
  • 1/2 medium onion chopped
  • 1 garlic clove minced
  • 2 cups Bone Broth
  • 1 tsp garlic powder
  • 1 medium zucchini
  • Salt & Pepper to taste

Instructions
 

  • In a 2 quart saucepan, heat olive oil and toss in the chicken, celery, carrot, onion and garlic powder.
  • Saute until the onion is transparent.
  • Add the minced garlic and saute for 1-2 minutes longer.
  • Then add the 2 cups of bone broth and bring to a boil.
  • While you are bringing the soup to a boil, spiralize your zucchini and set aside.
  • Once the soup is boiling, pull off the heat and add the zoodles.
  • Allow the zoodles to sit in the soup for 2 minutes so they can cook a little.
  • Serve your chicken zoodle soup up in a nice big bowl and enjoy!

Notes

Two people can technically eat from this bowl of soup but I don't particularly like to share so I eat it all by myself.
