Chicken Zoodle Soup

Ingredients

Olive Oil

chicken breast
cooked & chopped
1
celery stalk
chopped
1
carrot
peeled and chopped
1/2
medium onion
chopped
1
garlic clove
minced
2
cups
Bone Broth
1
tsp
garlic powder
1
medium zucchini
Salt & Pepper
to taste
Instructions
In a 2 quart saucepan, heat olive oil and toss in the chicken, celery, carrot, onion and garlic powder.
Saute until the onion is transparent.
Add the minced garlic and saute for 1-2 minutes longer.
Then add the 2 cups of bone broth and bring to a boil.
While you are bringing the soup to a boil, spiralize your zucchini and set aside.
Once the soup is boiling, pull off the heat and add the zoodles.
Allow the zoodles to sit in the soup for 2 minutes so they can cook a little.
Serve your chicken zoodle soup up in a nice big bowl and enjoy!
Notes
Two people can technically eat from this bowl of soup but I don't particularly like to share so I eat it all by myself.
