Super Simple Paleo Mexi-Mayo

Ingredients
  

  • 1 cup Avocado Oil
  • 1 egg
  • 2 small limes or one large on
  • 1/4 tsp chili powder
  • 1/4 tsp garlic powder
  • 1 tsp salt

Instructions
 

  • Pour oil into a container (bowl or mason jar) that has a wide mouth.
  • Squeeze the juice of the lime(s) into the container.
  • Add the egg
  • Add the chili powder, garlic powder and salt
  • Blend with an immersion blender.

Notes

Within seconds you will notice that it will whip up into mayonnaise. Make sure and lift the blender out a little so that you can combine all the oil.
Store in the refrigerator in an air tight container for up to two weeks. I recommend a mason jar- that's how mine lasts two weeks. Usually it's gone in days though!
