Paleo Chicken Salad

Delicious, NOT BORING Chicken Salad

Ingredients
  

  • 4 chicken breasts cooked, cooled and chopped
  • 1/4 cup chopped red onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 1/2 cup sliced red grapes
  • 1/2 cup chopped walnuts
  • 1/2 cup Paleo Mayo Avocado Oil Mayo
  • 1/4 cup Paleo Ranch Dressing
  • 1/2 teaspoon Garlic Powder
  • Salt & Pepper to taste

Instructions
 

  • In a large bowl, mix the chicken, onion,celery, grapes, walnuts and garlic powder together.
  • Then spoon in the mayo and ranch dressing and mix well.
  • Serve over greens with a side of plantain chips.
  • You might like more dressing, or maybe not but for me this was the perfect consistency of dressing.

Notes

I love to serve this chicken salad over greens. Lately my favorite greens have been Sweet Kale by Eat Smart without the cranberries or dressing that it comes with.
P.S. This can also be made with regular mayo and regular ranch dressing.
I usually double this recipe and so my pictures reflect that but the recipe itself isn't written as doubled.
