Chicken Zoodle Soup


Soup weather is upon us! I love chicken noodle soup but since I’m trying not to have pasta too often AND I had a zucchini that needed to be used, I decided to make Chicken ZOODLE Soup!

First, I have to tell you about this little gadget that I picked up at Target. It was $9.99 and it has been a fun little gadget to have around. It’s called a Vegetti. It’s one of those items that I’m sure was a late night infomercial but it’s really pretty cool!vegetti

I love it for making zucchini noodles (Zoodles) and carrot noodles. It’s a little harder to get a sweet potato in there but I think I’m gonna upgrade my spiralizing gadget this winter anyway. I bought this one to try out the concept (Because at first I wasn’t convinced that I absolutely NEEDED this gadget) and in the process I fell in love!

One of my favorite things to make with this gadget is zoodles, ya know, zucchini noodles. I love to make them to make a “pasta” salad or in this case as the noodles for my soup. This recipe took me a total of like 10 minutes to make and I was completely satisfied by it.

Chicken Zoodle Soup

Ingredients
  

  • 1 Tbsp Olive Oil
  • 1 chicken breast cooked & chopped
  • 1 celery stalk chopped
  • 1 carrot peeled and chopped
  • 1/2 medium onion chopped
  • 1 garlic clove minced
  • 2 cups Bone Broth
  • 1 tsp garlic powder
  • 1 medium zucchini
  • Salt & Pepper to taste

Instructions
 

  • In a 2 quart saucepan, heat olive oil and toss in the chicken, celery, carrot, onion and garlic powder.
  • Saute until the onion is transparent.
  • Add the minced garlic and saute for 1-2 minutes longer.
  • Then add the 2 cups of bone broth and bring to a boil.
  • While you are bringing the soup to a boil, spiralize your zucchini and set aside.
  • Once the soup is boiling, pull off the heat and add the zoodles.
  • Allow the zoodles to sit in the soup for 2 minutes so they can cook a little.
  • Serve your chicken zoodle soup up in a nice big bowl and enjoy!

Notes

Two people can technically eat from this bowl of soup but I don't particularly like to share so I eat it all by myself.

I love using the Pacific Organic Bone Broth. There is no sugar in this broth and that’s part of why I love it the most. When you go to the store to get some, make sure you are getting BONE broth and not just chicken broth- although you could just use chicken broth if you wanted to. There are lots of benefits to bone broth itself. You can read about it HERE.

Everything I’ve read and researched says that it’s really inexpensive to make your own bone broth and it’s better for you as well.  I haven’t ventured into making it yet but it’s on my bucketlist of things to try. So, for now, until I have some time- I will buy it. For awhile, locally, it was hard to find it but lately, our grocery store is moving on up in the world!

When I made this the other night, I made it and then sat down to watch a Christmas movie on Netflix. It was called “The 12 Dates of Christmas“. Ha! Yea, I’m one of those girls- ya know, the ones who love the Hallmark Christmas movies and I could watch them all year long!
