Boiling Chicken

I don’t know if I’ve ever said this out loud to anyone but I really love to boil chicken. LOL!

There is just something about having fresh chicken broth at the end of it all that makes my heart smile. I love using it for Tortilla Soup, Chicken Soup, Chili, in fideo and arroz. AND, it’s so much better for you than bouillon cubes that are full of MSG.

If you have never used the broth that’s left over from boiling chicken you really should. You are missing out on that liquid gold!

I love to let it cool completely (because the fat floats to the top), skim off the fat and pour it into mason jars. Then I stick it in the refrigerator and use it up that week. It’s usually good for about two weeks in the refrigerator but it doesn’t ever last that long in the house.

My favorite things to put in the water before I set my chicken to boil are:

  • 1 Tbsp of Kosher Salt
  • 1 stalk of celery (cut in half)
  • 1/2 of an onion
  • 1 carrot, peeled and cut in half
  • 2 bay leaves

None of those things stay in the broth once you jar it up, but the flavor they all leave behind is pretty amazing!

In case you’re wondering why I’m boiling chicken, I’m making some Enchilada Suizas for my Financial Peace University Class party. Tomorrow is are last class!!! We finished and learned A LOT! I’m so excited to put all the principles and values that we learned in the class into practice. We have already started on many.

  1. As usual when reading your food posts, my mouth is watering. I want to boil some chicken now to make Enchilada Suizas and have homemade chicken broth! Normally I wouldn’t think boiling chicken would be so exciting but you took it to another level for me. 🙂
