Try it Out Thursday

Try It Out Thursday is dedicated to recipes, products or ideas that I find on Pinterest or receive in my e-mail. I tend to “pin” and save a lot of recipes and craft ideas and never try them so I decided that this will help me wade through the many pins and e-mails that I have.

**Sorry this is actually happening on Friday**

I am not a leftover kind of girl. Most of the time when I cook, I only cook enough to eat at that moment. I don’t like to cook too much food because leftovers just don’t do well in my refrigerator. Leftovers go to my refrigerator to get moldy, LOL!

That of course has changed since we bought a house and pay a mortgage now. We are on a budget so I stretch what I can, where I can.

The other day I was trying to figure out what to eat. I seemed to only have “Half” of whatever meal I wanted to make. That was gonna mean a trip to the grocery store I was NOT about that at the time. Realizing that I was gonna need to get creative.  I opened the doors to the refrigerator again and saw that I had a Ziploc container from two nights before that had about 1/2 cup of “Carne con papas” (Ground Beef with potato and spices). At first I thought, “Hm…a couple of tacos would be good” but I had to feed myself and the Mister. Then I spotted the eggs and I thought of the perfect thing to make!

  • I set my oven to 400 degrees, got out a sheet pan, tossed the tortillas on it and put in the oven while I got the rest of the stuff I needed ready to go.
  • I put the Ziploc container in the microwave and started heating up the Carne con papas.
  • I pulled out the eggs, a skillet and a Tbsp of butter and made some “over easy” eggs.
  • I pulled out the tortillas from the oven and they were then called “tostadas“.
  • I spooned on some carne con papas  and placed one egg on each tostada.

Doesn’t that look good???!?!?

It makes for a great week night “brinner” or even just breakfast and it will help get rid of any leftovers you might have hiding out in your refrigerator. Or you could just make it exactly like this because it is delicioso!

P.S. It has been the craziest couple of weeks I have had in a VERY long time but I made it through! Next week, I will be on vacation but I will still be blogging. I am actually very excited to get some more blogging done and take some time to rest and do nothing.

I will hopefully also be planning my housewarming/5 year wedding anniversary too!  There’s so much to celebrate this year. God has been so good. So, lots of excitement to come!
