Coconut Date Bites

The other day I was at the grocery store… Gucci-B (HEB). We call it Gucci-B because it has all the “fancy” stuff. It’s my favorite grocery store in town. The hubby and I were walking around looking at all the fruit and nut medleys and discussing how much added sugar there are in most of them and my eye caught something interesting.

I turned them over to look at the ingredients list and my heart screamed YES!! I looked at my husband and said, “Babe, look at these! We are buying some!” We paid for our groceries and headed to the car hurriedly. Once there, I opened up the pretty orange package and my tastebuds were so ecstatic about what they tasted. They taste like (For those of you who know Mexican candy at all) “Leche Quemada” without the “Leche Quemada” and without the extra sugar, LOL! I don’t know how many came in the package because we gobbled up all BUT three before we got home. LOL!

The next day when my husband made a quick run to the store he found out that the store didn’t have anymore. I was mucho disappointed.

I got online to see if I could order them, but they were way more expensive than they were at the grocery store, PLUS I’d have to pay shipping. Then I thought, I can probably make these. (I usually think this about most things–it’s not always a good outcome but sometimes it is!) So, I “GOOGLED” around and found a few recipes that sounded easy enough and I made my own take on them.

You should totally make these! Why? Because they are Vegan, and Daniel Fast Friendly, YAHOO!

COCONUT DATE BITES

  • 1 cup coconut flakes (unsweetened)
  • 1 cup almonds
  • 1 lb pitted Medjool dates
  • 1 tsp ground cinnamon

If you buy dates that need to be pitted, pit your dates.

Pulse coconut flakes in a food processor until they look more like shreds and set aside. Pulse almonds in a food processor until they are chopped into small pieces.

Add the dates and cinnamon.

Once the paste is mixed it will start to form a ball.

Remove from food processor and roll into 1″ squares or bites.

Roll and press into the shredded coconut. If your hands become sticky due to the sugar in the dates, just rinse your hands and that will take,care of the stickiness.

Serve chilled.

You can store these in the fridge for up to 2 weeks.
